We are all in need of a new pasta salad recipe to take to the last of the season’s
parties and barbeques. This recipe is so fast and easy, if you happen to have a bottle of
your pesto in the fridge or freezer and the flavor is amazing. Add grilled chicken to this
dish and you’ll have a full fledged dinner on your hands.
Tortellini Pasta Salad with Fresh Vegetables and Pesto
1 ½ pounds fresh tortellini pasta, cooked
4 bell peppers of veering colors, chopped
1 red onion, chopped
1 cup shredded parmesan cheese
½ cup pesto
To Taste salt and pepper

Thanks for that, it was a great read. I can’t believe it , but it’s my wife’s and my 10th anniversary next week. Our first anniversary was in Italy, and we had this incredible shrimp pasta in this little cafe in Rome.
