Chocolate Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
1 Tablespoon vanilla
2 cups shredded zucchini
2 ½ cups flour
½ cup cocoa
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
Combine all dry ingredients (except sugar) in bowl. Mix well and set aside. In a mixer add eggs and oil to combine, add sugar vanilla and zucchini. When well combined fold in dry ingredients just enough to moisten and combine. When Quick Breads are over mixed they become rubbery. So it is best to not over mix when combining dry ingredients.
Bake at 350 degrees for 1 hour.
Sprinkle the following on top of the batter before baking, split ingredients between two loafs.
½ bag chocolate chips
3 tablespoons raw cane sugar
